It's a wonderful combination of flavors served on mashed sweet potatoes. I have high iron levels, therefore use red meat sparingly, but this is delicious with ground turkey or chicken. The Italian flavor profile of my version reminds me a bit of a Cacciatore. In order to keep it low on the glycemic index I use fruit only jam or just some butter and a little agave. My kids love it with warmed maple syrup, though. It is so delicious! I absolutely love, love, love her cookbook and blog!
This morning, I was in the mood for some spice, so I thought I'd try for a bit of Cuban flare. I always make double batches of this hash to heat up quickly later in the week. I was lucky enough to stop by our local farmer's market Wednesday, where I found some organic baby kale from Venetucci Farms. Once again, my diet has taken a crazy turn. I have been diagnosed with increased intestinal permeability, or leaky gut syndrome…Nice, huh? Kiwi is such a beautiful green fruit and is bountiful at Costco right now. Of course, purchasing kiwi in a 4 pound box limits your ability to purchase only ripe, sweeter ones. We are fans of adding a little honey, lemon and ginger to compliment the sweet-tartness of this powerhouse fruit. Not only are kiwi pretty, adding a bit of the tropical to our kitchen, they have nearly 300% of the Staciehttp://www.blogger.com/profile/09875666146977713753noreply@blogger.com0tag:blogger.com,1999:blog-1634339129971392319.post-41666920379719782972010-03-21T08:21:00.000-06:002010-03-21T08:21:32.067-06:00Scalloped Ham and Potatoes with Goat Cheese
Food and Holidays go so well together, and Easter is no exception. Ham and asparagus are always on the menu at our home. Most hams contain sulfites, dextrose and other undesirable ingredients. Luckily, Whole Foods and other natural food grocers carry more alternatives to mass-produced, chemically-stuffed, inhumanely treated little piggies. I love chicken salad. I love it on crackers, on toast, on a bed of lettuce or on a spoon! There are so many variations as well: curry, asian, spicy, traditional, with pecans, pistachios, almonds, pine nuts, grapes, apples, oranges, cranberries, pineapple, coconut...endless possibilities!
This recipe is more of a traditional chicken salad with mayonnaise, grapes and pistachios. I admit, I love mayonnaise. Not like eating it straight out of the jar love it, but with sandwiches, in dips, spreads, and salad dressings. It adds creaminess and tang that is just so good. It's nearly impossible to find commercially made mayo that works with my numerous sensitivities, so I make my own and might never use store-bought again!

I just recently tested tomatoes on rotational basis and did not have a reaction: YAY! I am not brave enough to eat a marinara or red meat sauce yet, but an occasional tomato on a salad, with an egg, or on a sandwich is a beautiful thing! In its stead I developed a roasted red pepper sauce that is wonderfully rich on pasta or white fish. This dish is a favorite primarily because it is delish and easy, but also lamb is my favorite red meat, and spinach is one of my favorite vegetables. I replaced the gluten-containing wonton wrappers with rice-paper wrappers and rolled it "egg roll" style. Rice paper does not get quite as crispy as wonton wrappers, but it has a light crisp-chewy texture that works nicely with the creamy cheese and crunch of bacon. Okay, it is 8 degrees outside. I was supposed to do our weekly shopping today, but brrrr! I have tried so many pancake recipes, traditional and gluten-free, and have never found one I loved. Some were doughy, fell apart, dry, unflavorful or something just doesn't work for me (yes, I realize it could be me...) I know there are so many gluten-free flour blends in cookbooks and on the market, and usually I opt for the convenience of Pamela's or Bob's All-Purpose gluten-free blends. It certainly isn't dairy free, but my family just loves this simple velvety soup. Frigid weather combined with a couple sick girls has us making several soups recently. This one is a crowd pleaser for sure. We served it at our National Charity League meeting and received many thumbs up. Oh, how I needed bread, something to go with my steamy cup of coffee. I wanted crispy on the outside, tender on the inside (hold the grit, please), slightly sweet, a vehicle for drippy honey. I realize pork broth isn't a standard broth. In fact, I'm not sure you can even find it at the store. But when you are on a rotation diet which doesn't allow the use of chicken broth multiple times a week, you have to get creative. I really like using this for bean and lentil soups. By design, pork is one of my protein choices on bean and lentil day, such a great pairing!
